Coconut Whipped Cream
2 Cans- Organic Coconut Milk (I prefer Thai Kitchen)
(Completely chilled to make sure solids separate)
1/3-1/2 Cup Powdered Sugar - Sifted
1 tsp Gluten Free Vanilla
In mixing bowl, add only solids from the two cans of Coconut Milk.
Whip until stiff and then add sifted powdered sugar and vanilla. Whip again until powdered sugar is incorporated. Use immediately or chill for later. If using later wisk lightly before serving.
