6 Tilapia Filets
2 fresh limes
¼-1/3 cup Taco Seasoning*
4 TBSP Extra Virgin Olive Oil
12 homemade Gluten Free Flour Tortillas
Romaine Lettuce (Washed, dried and chopped)
Fresh Mango Salsa***
Preheat your skillet on medium to medium high add the olive oil.
Lay out your six fillets on a cookie sheet, squeeze one of your limes over one side and flip over and repeat with second lime. Take your homemade Taco Seasoning and sprinkle over the tilapia making sure to coat the entire filet. Turn over and repeat.
Sear the fish in the preheated skillet for approx. 2 minutes per side. Place half a filet on each tortilla. Top with the romaine lettuce and fresh mango salsa. If you can eat dairy a little cheddar cheese is a nice addition.
* Homemade Taco Seasoning
1 TBSP Cumin
1 TBSP Chili Powder
¼ tsp Garlic Powder
¼ tsp Dried Oregano
1 tsp Paprika
¼ tsp Red Pepper flakes(optional)
1 tsp Sea Salt
1 tsp Black Pepper
Mix all together thoroughly store in an air tight container.
I prefer organic spices.
***Fresh Mango Salsa
1 large Fresh Mango, diced
1 medium Fresh Jalapeno Pepper, finely chopped
3 TBSP Sweet Onion, finely chopped (red onion works as well it adds a little different flavor and color)
pinch of Sea Salt
pinch of Cumin
½ of Fresh Lime, juiced
Fold first 5 ingredients together gently. Then squeeze your fresh lime over top of everything. Let chill before serving.
